ELF ON A SHELF....WELCOME NIKKI!!

This is a picture of Paisley and my very favorite office staffer Nikki, who works for my biggest dermatology office. Paisley has known Nikki since she was born, and Paisley loves her! Sometimes on Fridays Paisley goes with me to offices to make calls. She loves Nikki because she always gives her candy.



So when she got to name her "Elf On A Shelf", of course she picked Nikki!
I think this is so funny...it is crazy how their little minds work.




Nikki rang our doorbell on Wednesday, and brought M&M's, Go Fishing, balloons, and a note.

We had a fantastic Thanksgiving...We spent the day with Stephen's family in Lebanon, Kentucky. We went up and visited for the day, due to the fact that we are NEVER home as a family of four, and I wanted to have a jump start on decorating. Which didn't really happen. But I did start decorating. That counts, right?

GIVE THANKS...


-I am thankful for salavation that I am definitely not worthy of...

-I am thankful for my precious husband that I love very much. He works many long hours, travels and flies numerous times a week, and never complains.

I know he does it all so we can give our children a great life...

-I am thankful for 2 healthy children that are hardly ever sick. But when they are, I can drive them to the doctor, take them right in, and have medicine almost instantly. I am reminded of all those children in Honduras who have nothing, and will walk 6-8 miles to see a physician. In the rain.

-I am thankful for loving parents, who are somewhat normal (ha) and after 39 years are still married and kiss each other.

-I am thankful for selfless in-laws who treat me like their own daughter. And who treat my children like their own. If it was not for them, I would not be able to work. They allow me to travel and not worry about my babies.

-Speaking of jobs, this year I am especially thankful for a job. After going through layoffs twice, I feel unworthy and very grateful.

-I am also thankful for a church family that always listens, prays, calls, writes, and texts words of encouragement throughout the week.

-I am thankful that we live in a country where we are allowed to worship freely.

-I am thankful for my precious sister and all she means to me.

-I am thankful for Facebook friends, blogger friends, and my girlfriends....too many to list, but each one possess such wonderful qualities.

-And now for the trivial things...

Jonas, my hairdresser, who always makes me feel good about myself.

SOME RANDOMS....


-I LOVE my new stroller. I wasn't digging the BLUE, but I snagged this for a BARGAIN. As in, $250 off!! For that much, I can handle the color. And Griffin loves it. He loves being able to sit next to Paisley and look out.

-My house is starting to feel cluttered. This is when I go around the house with a garbage bag and start throwing away. The kids and dogs run and hide, they are afraid they might be next.
I am one of those people who cannot even watch Hoarders. It makes me itch and break out in hives.

-I booked our Disney trip today. YAY! We originally planned for October, but that did not work with my company layoffs and Stephen's job.

-I am already trying to find Christmas cards. This proves to be a daunting task. And an expensive one, especially when you send out 150+ cards.

-So excited about being home this week, not traveling, cooking, decorating, watching movies, and Black Friday shopping. I am one of those crazy people that will knock you DOWN for that last cashmere sweater or Nutcracker at Kohl's. I make Stephen go, too. He drives my getaway van. But don't worry, I am not wearing a fanny pack.

-Can't wait to see Tangled and Love and Other Drugs this week. LAOD is about the pharmaceutical industry and the launch of Viagra. I hope it doesn't make our industry look too bad. But Jake Gyllenhal. HAWT. Can't wait to see him on the big screen in his black Ray-Bans. Wowzers.

-I feel sorry for Santa Claus. December isn't even here and I am already tired. I can't imagine how tired he must be...

PUMPKIN AND GINGERBREAD TRIFLE...PAULA DEEN STYLE



Ingredients
2 (14-ounce) packages gingerbread mix
1 (5.1-ounce) box cook-and-serve vanilla pudding mix
1 (30-ounce) can pumpkin pie filling
1/2 cup packed brown sugar
1/3 teaspoon ground cardamom or cinnamon
1 (12-ounce) container frozen whipped topping
1/2 cup gingersnaps, optional
Directions
Bake the gingerbread according to the package directions; cool completely. Meanwhile, prepare the pudding and set aside to cool. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. Sprinkle of the top with crushed gingersnaps, if desired. Refrigerate overnight. Trifle can be layered in a punch bowl.

Mississippi Mud Cookies....










Ingredients
1 cup semisweet chocolate morsels
1/2 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped pecans
1/2 cup milk chocolate morsels
1 cup plus 2 Tbsp. miniature marshmallows
Preparation
1. Microwave semisweet chocolate morsels in a small microwave-safe glass bowl at HIGH 1 minute or until smooth, stirring every 30 seconds.
2. Beat butter and sugar at medium speed with an electric mixer until creamy; add eggs, 1 at a time, beating until blended after each addition. Beat in vanilla and melted chocolate.
3. Combine flour, baking powder, and salt; gradually add to chocolate mixture, beating until well blended. Stir in chopped pecans and 1/2 cup milk chocolate morsels.
4. Drop dough by heaping tablespoonfuls onto parchment paper-lined baking sheets. Press 3 marshmallows into each portion of dough.
5. Bake at 350° for 10 to 12 minutes or until set. Remove to wire racks.
